Sweet Bean Harvest
By Vicki Johnson, vjohnson@advertiser-tribune.com
OLD FORT - The American Sweet Bean Co.'s edamame harvest is in full swing and sweet beans are heading for a fresh produce market, as well as their usual frozen food packages.
CEO Charles Fry said the local agribusiness has been growing each year.
"Our production doubled from last year and we plan to double or triple next year," he said.
Usually, edamame is sold frozen. But this year, for the first time, Walt Churchill's Market grocery stores in Perrysburg and Maumee are to carry the fresh version.
Most of the harvest is being processed at a facility near Old Fort.

To our customers:
I am writing today to underscore our commitment to ensuring Hertzfeld Poultry Farms, Inc customers receive the safest, highest-quality eggs available.
You are probably aware that the egg industry is in the midst of a nationwide egg recall, because of a possible incidence of Salmonella. Wright County Egg in Iowa, in cooperation with FDA, has recalled 380 million shell eggs as a precautionary measure. While these eggs have not been confirmed to contain Salmonella Enteritidis (SE), and testing is underway, conducting the voluntary recall was the right thing to do to ensure consumer safety.
It is important for you to know that Hertzfeld Poultry Farms, Inc does not purchase or distribute any eggs from Wright County Egg.
At Hertzfeld Poultry Farms, Inc we take our ongoing work to provide safe eggs for your consumers very seriously. That’s why our farm follows stringent standards for egg production and participates in food safety programs, such as the Ohio Egg Quality Assurance Program (OEQAP), to keep our flocks free from disease and to ensure safe, high-quality eggs are provided for our consumers.
Ohio is a leader among states in having these comprehensive egg safety protocols. In fact, OEQAP incorporates all of FDA’s new SE rules that began July 9, 2010, as well as additional protective measures.
In addition, we run our farm with careful attention to biosecurity by employing strict on-farm measures, including, but not limited to:
- Monitoring of flocks by poultry veterinarians;
- Restricting access to poultry barns to essential personnel only;
- Prohibiting employees from keeping or handling birds off-premises;
- Prohibiting employees from visiting multiple poultry barns on a given day; and
- Increasing the use of protective gear, including biosecurity suits and shoe covers.
We greatly value our relationship with you and with all our customers. For more specific details about the recall, please see the enclosed information. If you have other questions or would like to discuss Hertzfeld Poultry Farms, Inc egg safety programs further, please contact Tom Hertzfeld II at 419 832 2070 or 419 467 4212
Thank you.
Tom Hertzfeld II

Depending on the Kind-ness of StrangersBy STUART ELLIOTT
Published: July 12, 2010 New York Times
A line of snack bars is trying to live up to its brand name with an initiative that offers a twist to the typical cause marketing effort. The brand is Kind Healthy Snacks, which peddles Kind Fruit and Nut and Kind Plus bars with the slogan “Be Kind to your body, your taste buds and the world.” Kind is sold by Kind L.L.C. in New York, a brainchild of Daniel Lubetzky, the man behind do-good efforts like PeaceWorks and the One Voice Movement, which, as he puts it, “use business forces and market forces as glues to bring people together.”

Kombucha Teas Available in the Dairy Section at WCM!
Talking with Bob Munley is a conversation in tangents.
Questions about the Kombucha Kvass tea he brews in Worthington and sells at numerous outlets around Columbus lead to personal revelations of health struggles which turn toward his love of astrology and his faith in a universal force in life and eventually he circles back to how his goji-ginger flavor is his favorite.
Singer David Byrne and New York’s famous CBGB music club come up at one point.
As does German cafe culture and a summation on how the liver works.
The founder, chief brewer and – literally – bottle washer of Personal Wellness Integrity Ltd. is nearly as effervescent as his fermented green tea, made with a pancake-shaped patty of live bacteria and yeast and pitched to the health-conscious people, who, as a market segment, are growing in national popularity.
“I didn’t do this to make money,” Munley said. “I believe in the drink.”

Today's granola: clever, crunchy, gluten-free
In a time when healthy and whole-grain is in our eating lexicon, there's a reason granola is making a comeback. The original bland concoction of oats and grains from 40 years ago has taken on a new persona and it's not just viewed as healthy hippie food anymore -- now it's considered gourmet (and, yes, even gluten-free).
In fact, the cereal comprised of what once tasted like sweetened drywall smattered with a sprinkling of rock-hard raisins has been transformed into more artisan brands than you shake a stalk of oats at. Gourmet ingredients -- from coffee beans to cacao nibs, and green tea to ginger, and even black pepper -- are starring along with artisan wildflower honey, toasted hazelnuts and macadamias, sea salt and a wide variety of exotic dried fruits.
And granola's not just for breakfast anymore. In addition to being a healthy and tasty morning treat, it's a delicious snack and great topping for yogurt or fresh fruit -- and even makes you feel less guilty about an ice cream indulgence.
Metro Detroit has more than its share of home-grown granola, Michaelene's, Jessica's and Randy's, and each brand is unique.

The Great Morel Mushroom
The Great Morel Mushroom is here now! This is a very short season so best you act quickly to experience this delight. This euphoric annual ritual can now be found at Walt Churchill's Markets. The adventure of foraging in Oregon has produced an excellent crop of these ever-elusive and oh-so-mysterious Great Morels!
Less is Better... many people may prefer some kind of coating, flour, crackers, etc. But in my opinion, Less is Better!
Wonderful served with a Red Meat Dish...Niman Ranch Steak for me, full of flavor and juice just off the grill. In a skillet melt enough butter to cover the mushrooms, salt and pepper to taste (try sea salt). That's all.
Sautee the mushroom over medium heat until desired doneness and enjoy. The time is now to enjoy these magnificent jewels of the forest. Supplies are limited so don't delay - act today!

A Strange Brew May Be a Good Thing
NAOMI MOST, a devoted brewer of a fermented tea called kombucha, keeps her “big momma” in the garage. The big momma in question is a 20-pound pancake of gelatinous and, well, rather gross-looking bacteria and yeast floating atop a vat of kombucha, a drink that enthusiasts tout as a tonic for digestion, hair loss and all manner of bodily ailments.
It’s not for everyone.
“I live with my boyfriend and he finds it really weird,” said Ms. Most, 30, a manager for a nonprofit group in Palo Alto, Calif. “He doesn’t like the smell.”

Quake spares Chilean avocado industry
The Chilean avocado industry was mostly unaffected by the earthquake that rocked the country Feb. 27.
That’s the conclusion reached after a weeklong review by the Chilean Hass Avocado Committee, according to a committee news release.
Nor did the quake keep Chile from exporting more avocados to the U.S. than ever before, according to the release. About 300 million pounds had been exported through the first week of March, when 98% of the season’s shipments had been received.

Demand for high-quality coffee puts pressure on growers
GUATEMALA CITY — Battling everything from the effects of climate change to the high cost of fertilizers, farmers will struggle in coming years to grow enough high-quality coffee to meet growing worldwide demand, experts said at the annual World Coffee Conference held here last weekend.
Across the globe, consumers are more than ever asking for organic, Fair Trade, Starbucks C.A.F.E. Practices and other gourmet coffees, experts said. Those beans are going into lattes and cappuccinos served in the United States, Europe and increasingly in countries developing a taste for coffee, such as Russia and India.
The International Coffee Organization (ICO), which sponsors the annual conference, said 2010 worldwide demand for arabica and robusta coffee will come up about 10 million sacks short of the anticipated production of between 123 and 125 million sacks.

Sugar Gains Favor on Labels
Despite Costs, More Packaged-Food Producers Replace High Fructose Corn Syrup
High fructose corn syrup, the sugar alternative used to sweeten sodas, cookies, condiments and cereals, is beginning to lose some ground in the packaged-food industry.
More big-name food and beverage products—including Kraft Foods Inc.'s Wheat Thins —have begun dropping the ingredient in favor of sugar, despite a big difference in cost, saying they are responding to consumer preferences for ingredients perceived as more natural.
ConAgra Foods Inc. in May will start replacing the sweetener with sugar in its Hunt's tomato ketchup. "That's what consumers are looking for—simpler ingredient listings and ingredients they are familiar with," ConAgra spokeswoman Teresa Paulsen said. ConAgra said consumers preferred the taste of the new product in tests.
